The appearance of three distinct coloured spots shows that the food dye is not a pure substance but a mixture containing three different components.
Paper chromatography separates the components because the paper is the stationary phase and the solvent is the mobile phase. As the solvent rises, it carries the dissolved dye components up the paper. Each component has a different solubility in the solvent; those that are more soluble travel further, while those less soluble travel less far. This difference in solubility causes the components to separate into distinct spots.
