The emulsion test is used to detect the presence of lipids in a food sample.

Model answer (5 marks)

The emulsion test is carried out by adding a small amount of the food sample to a test tube, then adding a few drops of ethanol and shaking well. After this, an aqueous solution (usually water or a dilute acid) is added and the tube is shaken again. If lipids are present, the ethanol extracts them and the subsequent addition of water causes the lipids to form a milky‑white, cloudy emulsion.

In Sample A the mixture becomes cloudy and milky, indicating that lipids have been extracted and have formed an emulsion – therefore Sample A contains lipids. In Sample B the mixture remains clear, showing that no emulsion is formed and that lipids are absent.

A typical lipid molecule is composed of carbon, hydrogen and oxygen atoms.

Examiner tips

  • Describe the step‑by‑step procedure of the test; mention ethanol and water addition. Explain the visual change (cloudy white) as evidence of lipids. State the result for each sample and link it to presence/absence of lipids. Finish with the elemental composition of lipids (C, H, O).

Common mistakes

  • Failing to mention both ethanol and water in the procedure. Confusing the cloudy emulsion with a clear solution. Omitting the elemental composition of lipids or listing only two elements.

Mark scheme (5 marks)

  1. The sample is mixed/shaken with ethanol (then water/aqueous solution added)
  2. A cloudy white emulsion/milky-white layer forms if lipid is present
  3. Sample A contains lipid (because it gives a positive / cloudy white result)
  4. Sample B does not contain lipid (because it remains clear / gives a negative result)
  5. Lipids contain carbon, hydrogen and oxygen (all three elements required for the mark)
